Hotpot is something I never ate before moving to Hong Kong and has now become a weekly staple.  Sometimes twice weekly.  The idea is simple.  Take your favourite meats, tofu, vegetables, seafood and cook it yourself in a soup base of your choice. We usually go for half spicy and half plain just for variety.  Perfect for those who love food sharing and you get to use your expert palette to create a sauce to your liking.  Him Kee always has fresh ingredients and great tables for big parties.  I love their beef selection and the complimentary mango mochi. Some of the non-local residents of Hong Kong are  reluctant to try this local favourite, but I highly recommend it for cold winters and those who enjoy family style dining.
