Cart noodles are one of the most typical Hong Kong dishes you can have and probably one of the cheapest. All it entails is personalizing a noodle dish from the soup base and noodle type to all the toppings that go on top. You can find this served from a small stand or humble hole in the wall joints. My favourite spot, Noodle Supreme, is located and Sheung Wan and usually houses a gigantic line during lunch time. If you don’t like waiting try to go before or after the lunch hour rush. I go for the beef soup base and their delicious beef brisket. My favourite toppings are deep fried fish skin, beef balls, mushrooms, and curry fish balls. There are plenty of other vegetarian choices too, so flip through the menu and make a concoction that suits your taste. A must try while in HK.
