Octavium, located in One Chinachem Central, lives up to Chef Umberto Bombana’s stellar reputation serving one of the most delicious Michelin Star tasting menus in the city. Leading the kitchen is Executive Chef Silvio Armanni who was part of Bombana’s team opening Hong Kong’s 81⁄2 Otto e Mezzo BOMBANA. He shares a passion for sourcing high quality seasonal ingredients and ensures that everything down to the bread and pasta is all made in house. Octavium holds an intimate, cozy ambiance with minimal yet stylish decor. We loved starting with the decadent and delicate “Daniel Sorlut” Oyster with Kaluga Caviar & Champagne Foam, which was followed by insanely indulgent Italian Organic Fried Egg with Savoy Cabbage & Alba White Truffle. Chef Silvio not only perfects the fried organic egg by whipping the whites to perfection, but is incredibly generous with the white truffle while serving the dish tableside ensuring every fragrant bite was burning with flavour and texture. Other highlights included the al dente Spaghetti Chitarra “Cocco” with Sicilian Red Prawn & Tomato, the creamy, umami filled Acqerello Risotto with Seasonal Mushroom & Green Hazelnut, and the fragrant, crisp-skinned Kinki Fish served with vibrant Sweet Green Pea & Sprout. For the main course we were treated to perfectly prepared, tender and flavourful Cervena Venison with Pumpkin Swiss Chard & Porcini Mushroom, and the menu ended with fresh and satisfying Figs Millefeuille with Ricotta Gelato and traditional Balsamic Vinegar followed by petit fours and homemade Limoncello. Make sure to opt for the expert wine pairing where you’ll be treated to vintages that will bring out the alluring flavours in each dish.
