It was our first visit to the Maldives and we were eager to learn more about the local cuisine, their use of spices, and the preferable way to prepare some traditional dishes. The talented kitchen at JA Manafaru hosted a private cooking lesson, ideal for a lunchtime activity, where we had front row seats to an array of spices and were walked through the process of making a traditional tuna dish, fragrant soup, and curry. We loved the healthy local tuna salad, which we are eager to recreate at home, the warming traditional drumstick soup with coconut milk and smoked tuna, and the light and flavourful Fisherman’s Freshly Caught Coral Red Snapper with Coconut Curry Sauce and Pandan Scented Rice. Sitting down after the cooking lesson to enjoy our efforts was extremely rewarding and we took away the recipes, happy to add some of the techniques and flavours into our daily homecooked meals.
