Sing Yin have teamed up with premium tea brand MingCha and paired a selection of their fragrant and aromatic teas with Chinese Executive Chef Raymond’s mouthwatering signature dishes. We loved the fusion of Chinese classic flavours to create a delicious dining experience. The menu begins with the Sing Ying Deluxe Combination comprised of roasted pork belly with crispy crust, barbecued Spanish Iberico Pork and chilled Chinese Herbs with strawberry sauce paired with jasmine blossoms tea. This is followed by sweet Steamed Crab Claw and Egg with Chinese wine paired with First Flush Longjin Tea and Lychee Wood Fried Crispy Chicken paired with Phoenix Osmanthus Tea. The main course is a tender and extremely flavouful Sauteed Australian Wagyu Beef “Marble Score 8” with crispy garlic followed by a refreshing Poached Ice Plant in Superior Soup and Fried Rice with crab meat in ginger sauce. The menu ends perfectly with the Sweetened Bean Curd Pudding with Red bean paired with Teguanyin Classic Tea, and Sing Yin’s Fruit Platter. Each course paired perfectly with the intricate aroma and flavours of MingCha’s premium tea and created an enjoyable Chinese culinary experience. The tea pairing menu is available throughout May and June.
