SAAM’s menus are always about creativity and innovative culinary techniques, and this month Chef Patrick Dang has created a unique 7-course tasting menu inspired by his childhood. The “A School Day” Menu takes inspiration from typical school food and utilizes fun flavours and textures for a true foodie adventure. We loved starting with the playful take on Nutella & Toast, using decadent truffle instead of chocolate and pairing it with fresh scallop. The next course was a take on “Cereal & Yogurt” using foie gras parfait, savoury granola, almond yogurt and peppered pineapple. This was followed by “Sausage & Egg” using butternut pumpkin to look like an egg yolk, coconut, sweet lobster and fragrant Madras curry. The fish course was a take on the classic Fish & Chips, using a meaty piece of poached turbot, potato crisps, mushy peas and deep fried tartar sauce. The “Gluten Free Noodle Soup” was one of our favourite courses where chicken was used in the shape of noodles, all swimming in a rich and flavourful superior abalone broth. The final main course was inspired by the school roast dinner and featured a tender and indulgent piece of Wagyu Short Rib covered in Umami gravy with vegetables and a cheesy potato fry. The menu ended perfectly with the sweet and satisfying “PB&J” using peanut butter parfait, grape and banana pudding. A truly unique, innovative and enjoyable dining experience and we can’t wait to see what Chef Dang has in store for us next.

The “A School Day” Tasting menu is available now until October 31st priced at HK$638 for 5 courses, and HK$788 for 7 courses.
