Brought to you by multi-award winning chef Shane Osborn, who was the first Australian Chef to achieve one and two Michelin stars at Pied-a-Terre in London, Arcane successfully boasts Osborn’s skill and expertise alongside HK’s sophistication. The menu of modern European cuisine incorporates fresh produce, intricate flavours and recipes, and impressive display. We loved the refreshing Japanese Fruit Tomato with Homemade Ricotta, Pinenuts and Rocket with a Sherry Vinegar Dressing, and the flavourful Hamachi Carpaccio with a Salad of Jicama and Confit Fennel with a Soy and Ginger Dressing to start. For mains we highly recommend the tender and mouthwatering Pan Roasted Mayura Wagyu Sirloin 6+ with Yamaimo, Spinach Compote, Espelette Yoghurt and Onion Jus, and Chef Osborn’s signature Sauteed Potato Gnocchi with a Cep Puree, Charred Cevenne Onion, Mushroom Ragout and Parmesan. Our meal finished perfectly with desserts of Japanese Winter Strawberries with Creme Fraiche and Lemon Mousse with Passionfruit Curd and Mint Ice Cream, and a rich and delicious Chocolate Tart with Macadmai Nuts and Guiness Ice Cream.
