David Laris has introduced a new, talented Executive Chef to the Porterhouse by Laris family. Chef Angie Ford has created a new menu of raw and refined dishes for the discerning diner. Her previous experience as Executive Chef at Navarra by Rene Rodriguez and working alongside Chef Ned Bell at the Four Seasons Vancouver, has given her the knowledge to execute delicious and impressive dishes influenced by her training in classically French cuisine. We loved the fragrant signature Beef & Barley Brodo with Oxtail, Root Vegetable and Black Truffle, the creamy Lobster Bisque with Creme Fraiche and Fennel Pollen, and the rich and flavourful Charcoal-Flamed Beef Tartar with Cristini, Gribiche and Chef’s Pickled Mustard to start. For mains we highly recommend the fresh and buttery King Crab Legs and the mouth-watering Linz Heritage Angus USDA Prime Rib-Eye Steak with a side of their deliciously indulgent Man ‘n Cheese and Maple Glazed Cardamom Carrots. Our meal ended with a beautifully displayed dessert platter which included favourites such as the Baby Shiraz Poached Pears with Lemon Creme Fraiche and Shiraz Syrup, and the Baked Apple Tart Tatin with Vanilla Bean Ice Cream and and Apple Butter Caramel.
