We always love immersing in local culture, especially food culture, when visiting a new country so were very excited when the chef at Bejana hosted us in an authentic Balinese cooking class. The unique part if the experience was accompanying the chef at 7am to one of the island’s local fish markets to pick out the ingredients that we would later prepare. Witnessing the early shopper and local fishermen unloading gigantic fish and slicing fresh fare was a truly interesting experienced. We watched them bargain the price for a fresh whole Mahi Mahi we would later devour for lunch. Once back at The Ritz Carlton, the chef walked us through all the most widely used spices in Balinese cooking as well as preparation of chili pastes and fragrant soups. We transformed the whole mahi mahi into tender and flavourful Minced Seafood Satay, wrapped juicy marinated chicken into banana leaves for grilling, and created a traditional Balinese fried rice. Tasting the end result was mouthwatering and we are happy to go home with a few skills so we can create a slice of Bali here at home.
