PRU, located at luxurious Trisara Phuket, fuses modern dining with sustainable farming to create an innovative dining experience. Before dining at the unique venue, we visited Trisara’s organic farm where the majority of PRU’s menu is sourced. Chef Jim Ophorst’s passion is evident in the intricate and careful way he has set out the farm. There is a great mixture of classic and Thai herbs and vegetables, as well as organic eggs and a freshwater lake for catfish. Each ingredient is handled with extreme care which shows in the creative recipes we tasted. Favourite dishes of the evening included the flavourful Yellowtail Hamachi Tartare with Creme Fraiche Vinaigrette, Rosella Powder, Sea Grapes and Hua Hin Oscietra Caviar, the fresh and creamy Hen Egg with Smoked Catfish, Water Lilly Roots and Sorrel Sauce, the fragrant “Today’s Eggplant Selection” using Five Types of Basil, Homemade Bottarga and Chilli Flowers and Shaves of Champignons, the unique Carrots cooked in the soil they came from with Fermented Carrot Juice and Cured Egg Yolk, and the juicy Pak Chong Baby Lamb with Deep Fried Sun Choke, Raw Celery, Lamb Jus, Onion 3 Ways and Local Goat Cheese. The combination of textures and fresh bursts of flavour in every bite was a culinary treat and we loved knowing exactly where each ingredient was sustainably sourced. A must try for a truly unique, memorable and innovative dining experience in Phuket.
