Chef de Cuisine Nicolas Cegretin, from Provence, brings flavours from his home to Manila highlighting traditions of the French countryside. We loved the flavourful Octopus Confit with Potato, French Bean Salad and Crispy Pancetta, the fresh and light Homemade Tagliatelle with Squid, Green Peas and Lemon Zest, the delicate Roasted Blue Marlin with Chorizo, Kalamata Olives and Creamy Polenta, and the tender and perfectly cooked Pan-Seared Duck Breast with Foie Gras and Corn Texture. The delicious 65% Maraicabo Mousse with Chocolate Ice Cream, Truffle Cream and Hazelnut Crunch is the ideal indulgent treat to finish the gastronomic feast and one of the best desserts we had during our trip. The attention to detail and quality of produce in every dish was evident and every bite brought us right back to the rustic side of France.
