Chef Sidney Schutte and restaurant manager, Sascha Speckemeier, have worked together to bring Amsterdam a world class, innovative restaurant, Spectrum. Gaining two Michelin Stars only 7 months after its opening, the dynamic team prove they bring the best in innovative flavours and Dutch heritage. We loved the unique textures, amazing use of unique and fresh produce, and inspiration from both Dutch and world cuisines. Our fine dining tasting menu began with a vibrant and refreshing grapefruit ceviche, followed by decadent conch with a cauliflower & kaffir custard and caviar. We were wowed by the delicate take on black pudding displayed atop a giant slap of pork crackling, and the creamy and rich caramelised veal liver with bacon oil. Other highlights included an inspired take on local herring, irresistible carabinero with crispy shortrib and X.O. cream, slowly cooked eel with fried goose liver, and incredibly flavourful crispy duck with a gravy of pomegranate and black olive. The desserts were equally inspired including slightly savoury goat cheese with lime leaf and beetroot and a fun chocolate selection which accented flavours from each of the dishes we had previously tried on the menu. Make sure to opt for the wine pairing and allow the friendly sommelier to lead you through their rare and delectable selections.
