Treat your tastebuds to the flavours of Rocky Mountain Cuisine at Grand Hyatt Vail’s Gessner restaurant. We were so excited to sample the delicious menu at the mountainside venue and delved into mouthwatering local ingredients and rich and decadent dishes perfectly paired with a snowy day.
Our meal started with their indulgent Smoked Salmon Dip with Crispy Capers, Salmon Skin Cracklings and Everything Bagel Chips, and the creamy Haystack Mountain First Snow Cheese, bursting with fragrant richness and beautifully paired with Pecan, Honey, Pomegranate and Grilled Bread. The main courses were hearty, locally sourced, and just what we were craving after a day on the slopes. The delicate and fragrant Colorado Striped Bass was meticulously accented by fresh peas and bacon and ideal for a lighter option from the menu. We also loved the melt in your mouth Braised Short Rib which fused extremely well with the natural jus and textured polenta. If you’re travelling with kids the restaurant also offers and kids menu and ours couldn’t get enough of their cheeseburger sliders with a hearty side of fries.
The restaurant also features an impressive wine list and creative cocktails which went perfectly with the menu and we absolutely fell for the floor to ceiling windows overlooking the snowy scene. Gessner is a perfect spot for family dinners or a cozy date night when you’re craving high quality local flavours and produce expertly prepared into fine dining dishes. A must try for foodies visiting the Vail region.
