At Aubrey Restaurant in the elegant Aubrey Hotel Boutique, dining unfolds as a masterfully elevated tribute to Chilean cuisine. The traditional aromatic Pisco Sour, a fragrant, smooth, and well balanced classic, sets an inspired tone. Each course that followed celebrated locally sourced ingredients with inventive flair. Pacific oysters crowned with airy lemon foam and sumptuous sea urchin paired with vibrant golden chili gel was followed by a luxe ceviche of abalone and cochayuyo seaweed, harmonized with leche de tigre ice cream and grilled avocado.
The conger eel, adorned with bacon rose and mussels atop delicate “chocolate” soil, pushes boundaries with both creativity and flavour. The traditional Chilean corn pie, filled with hearty beef and chicken stew, is both nostalgic and refined. Every dish is thoughtfully coupled with excellent wine pairings drawn from Chile’s famed vineyards, enhancing flavors with grace.
