We enjoyed quesadillas and tacos, both bursting with fresh flavors, while the kids happily explored a well-rounded menu designed just for them. Adding to the fun, Palmadoro’s pizza truck served up delicious, freshly baked pies, perfect for a family-friendly poolside treat.

For a more refined evening, we dined at Tia Carmen, the resort’s signature restaurant showcasing elevated Southwest cuisine. The concept, inspired by the chef’s beloved aunt, shines through in every detail, from the heartfelt menu to the warm hospitality. We began with the fluke crudo, which was bright, delicate, and beautifully presented. The market fish a la plancha followed, perfectly cooked with bold yet balanced flavors that reflected the region’s culinary heritage. Each dish felt thoughtful and soulful, turning dinner into a true celebration.
