Watertable at Hyatt Regency Huntington Beach offers a refined coastal dining experience that balances rustic warmth with polished service. Our evening began in a sophisticated dining room that flows onto an ambient patio, perfect for lingering over dinner and wine.

We shared shishito peppers and bone marrow to start, the peppers arrived blistered and smoky, while the bone marrow was rich and indulgent. For mains, the grilled swordfish was flaky and bright, and the prime hanger steak arrived tender and deeply savory. A bottle of Chablis paired beautifully, its crisp acidity cutting through the richness.

Watertable’s menu emphasizes seasonal, regional, grill-centric American fare, and the wine program is a standout, earning praise and awards for its thoughtful selection. Service felt attentive and knowledgeable without ever feeling stiff, guiding us through pairings and pacing our courses so the night unfolded without rush. The ambiance, soft lighting, tasteful finishes, and a patio that hums with conversation, made it an ideal spot for a special evening.

Our table lingered over dessert recommendations from the server, who made thoughtful suggestions and treated us like welcomed guests, attentive, warm, and clearly proud of the kitchen’s offerings. It’s a place to truly celebrate good ingredients, excellent wine, and the leisurely rhythm of coastal dining.
