Perched high above the coastline at RIMBA by AYANA Bali, UNIQUE lives up to its name with a vibrant dining experience that combines bold South American flavours, creative cocktails, and some of the most spectacular sunset views in Bali. Overlooking the resort’s stunning poolscape and out towards the Indian Ocean, the restaurant offers an energetic yet relaxed atmosphere that makes it a wonderful choice for sunset drinks, dinner with friends, or a lively family meal.
We timed our visit to coincide with sunset and were rewarded with a breathtaking display of colours across the sky. The rooftop setting is one of UNIQUE’s greatest strengths, creating a dramatic backdrop that elevates the entire dining experience. As day transitions into evening, the atmosphere becomes increasingly vibrant, with guests gathering to enjoy cocktails while taking in the panoramic views.
Speaking of cocktails, they were one of the highlights of the evening. Beautifully presented and expertly crafted, they paired perfectly with the restaurant’s bold Latin American-inspired menu and added to the festive rooftop atmosphere.
We began with the Alitas, which delivered plenty of flavour and just the right amount of spice. The Pork Belly Chicharrón was another standout, featuring crispy crackling and rich, tender meat that balanced texture and flavour beautifully.
For our mains, the Birria de Res showcased slow-cooked beef packed with deep, comforting flavours, while the Barbacoa de Short Rib was wonderfully tender and full of smoky richness. Both dishes highlighted the restaurant’s ability to bring authentic South American influences to Bali while maintaining a polished and approachable style.
No meal here would be complete without dessert, and the Churros provided the perfect sweet ending. Crisp on the outside and light within, they were everything a great churro should be.
With its stunning rooftop setting, vibrant atmosphere, excellent cocktails, and flavour-packed menu, UNIQUE delivers a dining experience that feels both fun and sophisticated. For sunset views, Latin-inspired cuisine, and a memorable evening in Bali, it was one of our favourite dining experiences at AYANA.
