Nestled within the lush surroundings of Viceroy Bali, Apéritif delivers one of the island’s most memorable fine dining experiences. Inspired by the glamour of the 1920s, the elegant Art Deco dining room immediately sets the tone for an unforgettable evening, while Executive Chef Nic Vanderbeeken’s “Borderless Food” philosophy seamlessly blends refined European techniques with the vibrant flavours of Indonesia. The ever-evolving Guided by the Moon Cycle degustation menu takes guests on a beautifully curated culinary journey that changes throughout the year, making every visit unique.
Our evening began with an imaginative selection of canapés inspired by the New Moon. Delicate bites including ube, ikama, sambal matah, caramel taco, duck, caviar, smoked mackerel and shiitake mushroom awakened the palate and hinted at the creativity to come. The menu gradually built in richness as each lunar phase unfolded, beginning with a vibrant romesco paired with mango salad and pandan sauce before moving to heirloom tomatoes with goat’s cheese and kombucha.
The comforting Full Moon course showcased a beautifully creamy Madura blue crab risotto with pumpkin, fragrant kemangi and a deeply flavoured bouillon. One of the standout dishes of the evening followed, featuring organic chicken, lobster sauce and Jerusalem artichoke purée, balancing luxurious European influences with unmistakable Indonesian touches. The Line Caught Fish with dry aged bobor and seasonal garden vegetables offered a wonderfully delicate finale to the savoury courses before dessert arrived in the form of fragrant pineapple rice infused with vanilla and cinnamon. A delightful selection of petit fours rounded off the experience perfectly.
Every course was thoughtfully presented and explained with genuine warmth, making the meal feel as much about storytelling as gastronomy.
