Our evening began with the Mas Huni Rolls, a sophisticated take on the beloved Maldivian breakfast staple, traditionally prepared with tuna, coconut, onion and chilli. Beautifully presented and bursting with familiar island flavours, the dish offered a delightful introduction to the kitchen’s creative approach.
The Kopy Fathu Satani was another intriguing highlight, celebrating traditional local ingredients through delicate textures and carefully balanced seasoning. We also enjoyed the Kandu Kukulhu, a classic Maldivian speciality featuring tuna infused with aromatic spices, reimagined with an elegant contemporary presentation.
The Ihi Riha further demonstrated the kitchen’s ability to elevate comforting local flavours, bringing together fragrant spices and rich, complex aromas in a beautifully executed dish.
