Upper Modern Bistro have welcomed new Chef de Cuisine, Julien Cadiou, who has had years of experience in impressive French restaurants such as La Grande Cascade and Alain Ducasse au Plaza Athenee as well as the innovative Restaurant Kei with Chef Kei Kobayashi. Chef Julien Cadiou has introduced new creative dishes to the menu at Upper Modern Bistro while still sticking to it’s original inspiration of modern, fresh, and light ingredients presented with influences from both French bistro fare and Japanese sophisticated dining. We recommend starting with a few “Bites” from the menu such as the innovative Caramelized Octopus with White Miso and Mixed herbs, and the perfectly Marinated Mediterranean Bigeye Tuna with Citrus Mayonnaise. For our starters we loved the fresh and beautifully presented Hamachi Carpaccio with Sauce Vierge and Sea Urchins, and the delicious Egg Onsen with King Crab, Beans, Chorizo and a Piperade Emulsion which was one of the highlights of the night and a must order when dining here. For mains we highly recommend the Recan Pigeon with Hazelnuts, Poivrade Artichokes and Choy Sum which was full of flavour and perfectly cooked, and the tender, melt in your mouth Confit Iberico Pork Cheek with Tandoori & Orange, Spatzle & Baby Carrots. Don’t miss out on their extremely impressive cheese platter which is one of the best we’ve had in Hong Kong, and pair with a few glasses of sweet Graham’s Tawny Port. A perfect spot if you are searching for a chic yet relaxed venue where you can sample innovative and satisfying dishes created from fresh and mouthwatering ingredients. A definite Hungry Hong Kong favourite.
