During our stay at the chic and luxurious Conrad Manila, we were lucky enough to meet talented Executive Chef Thomas Jakobi and have him guide us through his culinary journey. Chef Thomas has worked in prestigious resorts all over Europe, Asia, and the Middle Easts and his skills are put on show at The Chef’s Table located at Brasserie on 3. The unique menus are fun, innovative, and full of sustainable and fresh ingredients. He works hard to source locally when he can and still ensure the highest quality and flavour. We started with fresh Sustainable Tuna Tasters where the tuna is flown in weekly from Palawan, including a delicate Tuna Tartar with Avocado and Dill Hollandaise, and Tuna Tataki with Sesame Fluid and a Fine Herb Salad. This was followed by a delicious Potato Espuma with creamy Slow Cooked Egg, Aubergine Dust and Grated Jamon Iberico Cebo. The sweet Sustainable Prawn with Crispy Paella Rice and Radish Salad was the ideal mix of textures and flavours, and we were incredibly intrigued and addicted to the unique Fine Roasted Aubergine Gnocchi with Black Cod and Intense Sesame which was another highlight of the menu. For the main meat course we were presented the most tender and flavourful Australian Wagyu Ribeye MB5 which was cooked to perfection. For dessert the rich Chocolate Dome Caraibe 66% with Crunchy Hazelnut and Milk Ice Cream was the perfect decadent treat to the extremely impressive menu. Make sure to ask for recommendations on wine, cocktails, or even whiskey pairing to get the full experience. We highly recommend experiencing The Chef’s Table for a fun, delicious and memorable dinner while in Manila.
