Root Central, a new fine dining establishment located on bustling Pottinger Street, strives to ultilize ingredients at their peak, using creative techniques such as cryoconcentration to present a mouthwatering and innovative menu. Chef de Cuisine Vito Chan specializes in French Fine Dining. His skills are evident throughout and he showcases his care for selecting the best ingredients. Environmentalism and sustainability are at the heart of every dish served at Root and food is sourced from smaller or local producers. The goal of Root is to serve the ingredient at it’s prime, mushrooms being the concentration of his current tasting menu. A variety of delicate and fragrant mushrooms are expertly sourced and used throughout the menu giving the diner variety in flavours, textures, and presentations. Highlights of the menu included decadent abalone paired with the highly regarded golden mushroom from Yunnan, the flavourful Porcini with Langoustine and Tofu Skin, the delicate and tender Hokkaido scallop served alongside sauteed truffle flower and luxurious French caviar, and the Chanterelle with Cuttlefish and Wintermelon. Their list of wines were expertly paired with the vibrant menu and we loved finishing with the sweet and savoury Black Truffle Ice Cream with Meringue and Almond. A must dine spot for foodies looking for a fresh and innovative dining experience.
