We were delighted to discover gourmet, innovative Italian cuisine in the heart of Phuket. Acqua is a chic, sophisticated restaurant serving an imaginative, luxurious menu created by Executive Chef Alessandro Frau. The dishes feature the finest ingredients both locally and internationally sourced, and beautifully crafted Italian recipes which bring your tastebuds back to Italy. Favourite dishes off the menu included the Sous Vide Cooked Octopus Salad fusing flavours of olives and lemon reminiscent of our trip through the Amalfi Coast, the indulgent 45 Minute Slow Cooked Egg on a permesan cheese fondue with fresh black truffle and crispy pancetta powder, the Raw Sicilian Red Prawns which were served with the tantalizingly rich baked heads of prawn, and the melt in your mouth Wood Fired Roasted Suckling Pig with saffron and violette potatoes and broad beans. The meal led us through a gastronomic experience and was perfectly paired with wines recommended by the sommelier. Acqua isn’t your average Italian inspired restaurant, but uses the chef’s expertise in Italian fare to bring authenticity and surprise to each traditional recipe, successfully creating one of our favourite dining spots while visiting Phuket.
