Novotel Phuket is located on one of the island’s most beautiful stretches of sand and we loved sitting on the outdoor terrace and eating casual Thai and Western comfort food throughout our stay at Soul Kitchen. The restaurant features an expansive dining area with both indoor and outdoor tables and even relaxed poolside dining. Each morning we feasted on a mouthwatering breakfast spread while overlooking sea views and we loved filling our days at the pool and beach before settling down on one of the cozy couches for pizzas and burgers to fill our hungry appetites. Evenings were always beautifully set on the breezy terrace overlooking Kamala Beach’s stunning sunsets. We watched the surfers and beautiful sky while sampling traditional Thai dishes, fresh fruit shakes and finishing with decadent desserts. Favourite dished included the “Thai Larb” Spicy Minced Pork Salad with Shallots, Mint Leaves and Dried Chili, the “Gong Tod Sauce Makam” Deep Fried Prawns with Fried Shallot in a Sweet Tamarind Sauce, the Stir Fried Chicken and Cashew Nuts with Carrots, Mushrooms, Onion, Spring Onion, Bell Pepper, Dried Chili and Chili Paste, the “Pad Thai” Thai Rice Noodles Wok Fried with Prawns, Shallot, Fried Tofu, Chinese Chives, Bean Sprouts, Egg and Sweet Pickled Turnips all wrapped in an Egg Net, the “Pla Neung Manow” Steamed Sea Bass in a Garlic Chili Lime Sauce with Chinese Cabbage and Local Celery, and the Fresh Grilled Andaman Sea Bass in Meuniere Sauce served with Pan Seared Broccoli, Cauliflower, Tomato, Baby Carrots and New Potatoes.
