We started with the sweetbreads, seared to golden perfection with a rich, buttery texture and crisp edges. Indulgent, but not overwhelming. Alongside came the grilled provoleta, a true Argentine staple. Red Bistro’s version was molten, smoky, and just salty enough, topped with a touch of oregano that brought everything together.
For mains, the Mar del Plata fish was delicately cooked. Flaky and moist with subtle citrus notes, a welcome lighter contrast to the heartier dishes. The braised beef, slow roasted to fork-tender bliss, was paired with a creamy Milanese style risotto that struck a perfect balance between richness and comfort. A standout of the night.
Of course, no Argentine meal feels complete without steak. The sirloin was flawlessly grilled, deeply flavorful, and served with classic sides that let the meat shine.
