Dinner at Yamazato in The Okura Tokyo felt like stepping into a calm, elegant bubble away from the city. The restaurant is understated and serene, very much in line with The Okura’s reputation for refined Japanese hospitality. We opted for the omakase menu and quickly understood why Yamazato is so respected for its dedication to seasonality and craftsmanship.

The meal began with a beautiful sequence of appetizers that set the tone for the evening. One of the standouts was crab served with a delicate vinegar jelly, light and refreshing while still full of natural sweetness. The tuna toro sashimi was everything you want it to be, rich, buttery, and impeccably fresh. A particularly memorable dish was the egg custard with cod milt, silky smooth and deeply comforting, yet unmistakably luxurious. Each dish felt thoughtfully composed and never overcomplicated, allowing the ingredients to speak for themselves.

A tender grilled tuna cheek followed, perfectly cooked with just enough smokiness to enhance the fish’s natural flavor. It was simple, satisfying, and quietly impressive. The highlight of the meal, though, was the chef’s sushi selection. Each piece was prepared fresh with careful attention to balance and texture. The rice, the seasoning, and the fish all worked in harmony, making it the kind of sushi experience that lingers in your memory long after the meal ends.

The experience was elevated further by an impressive wine and sake list, with thoughtful pairings that complemented the food beautifully. Service throughout the evening was refined and intuitive, attentive without ever feeling intrusive.

Yamazato delivers an omakase that feels both deeply traditional and genuinely special. It is the kind of place that reminds you why Japanese cuisine is as much about restraint and respect as it is about flavor.
