Dining on the Hill at Six Senses Samui offered a beautifully relaxed setting surrounded by lush greenery and sweeping ocean views, creating the perfect atmosphere for an elevated Thai dining experience. The open-air restaurant feels calm and inviting, blending the resort’s wellness-focused philosophy with authentic flavours and refined presentation.

What impressed us most was how incredibly flavourful every dish was while still feeling fresh and balanced. The Thai cuisine here was truly exceptional, easily some of the best we tasted during our time in Thailand, with elevated ingredients and thoughtful preparation enhancing every plate. We began with the carrots and lentils with lemon tahini dressing, a vibrant and refreshing dish bursting with colour and flavour. The Gai Kolae, a Southern Thai grilled chicken dish, was beautifully marinated and perfectly cooked, while the Moo Hong, a rich braised pork belly specialty from Phuket, delivered deep comforting flavours.

Seafood dishes were equally memorable, particularly the Poo Phad Pong Karee, a fragrant yellow curry crab dish packed with sweet succulent crab meat, and the Pla Tod Kamin, a perfectly fried turmeric fish dish infused with aromatic spices. To finish, the mango sticky rice was the ideal ending, balancing sweet ripe mango with creamy coconut sticky rice.

The service throughout the evening was absolutely outstanding, with the warm and attentive team taking time to explain dishes, accommodate preferences, and create a genuinely welcoming atmosphere that elevated the entire dining experience even further.

We also loved the extensive selection of healthy vegan options available, making Dining on the Hill an excellent choice for guests seeking lighter, plant-forward dishes without compromising on flavour or creativity.
