Perched on the fifth floor of The Henderson, one of Hong Kong’s most striking new architectural landmarks, Akira Back brings a bold new energy to Central’s dining scene. Created by globally acclaimed Korean-American chef Akira Back, the restaurant combines Japanese culinary techniques, Korean heritage, and contemporary American influences to create a dining experience that feels both innovative and approachable.

Designed by the celebrated team at AB Concept, the restaurant embraces a theatrical “Culinary Symphony” concept that perfectly complements both Chef Back’s cuisine and the flowing architecture of The Henderson. Floor-to-ceiling windows flood the dining room with natural light, while marble floors, metallic finishes, sculptural lighting, and playful artistic details create a space that feels sophisticated yet vibrant.

The meal began with one of the restaurant’s most iconic creations, the AB Tuna Pizza. Crisp, paper-thin tortilla was topped with beautifully seasoned tuna, umami aioli, black truffle, and a generous addition of caviar, creating an addictive combination of textures and flavours. Equally impressive was the Yellowtail Serrano, where delicate slices of yellowtail were paired with bright citrus notes, serrano chilli, and micro herbs for a refreshing start.

Seafood continued to shine with the Alaskan King Crab Legs, showcasing the natural sweetness of the crab while allowing the quality of the ingredient to take centre stage. The Brother From Another Mother Roll demonstrated Chef Back’s playful creativity, combining unagi kabayaki, anago tempura, foie gras torchon, and ponzu aioli into a decadent signature roll that balances richness with acidity.

For mains, the Jidori Chicken delivered exceptional flavour and tenderness, while the Filet Teppanyaki provided a perfectly cooked centrepiece, featuring beautifully seared premium beef prepared with precision and restraint. Every dish reflected the restaurant’s philosophy of combining familiar flavours with unexpected twists.
