Created by Dutch Indonesian chef Syrco Bakker, the restaurant follows a philosophy centred around traceability, nature and transparency, celebrating local farmers, fishermen and artisans while showcasing the very best seasonal ingredients. Before dinner, guests are invited to explore the property’s regenerative gardens, where many of the herbs, edible flowers and vegetables featured throughout the menu are grown, creating an immediate connection between the land and the meal that follows.

Every course arrives with thoughtful storytelling, allowing each ingredient and technique to shine without ever feeling overly formal. The shrimp delicacy wrapped in fragrant betel leaf with sambal merah was a wonderful opening, balancing freshness with gentle spice, while the hamachi paired with root vegetables, aloe vera and the bright citrus notes of andaliman was beautifully clean and refined. The oyster, topped with fennel, calamansi and aromatic kemangi, was another standout, highlighting Indonesia’s incredible produce with remarkable restraint.

The next courses continued to impress. The crayfish à la plancha was perfectly cooked, allowing its natural sweetness to take centre stage, while the beautifully crisp pork belly delivered rich, comforting flavours elevated by exceptional technique and balance. Every course felt deeply rooted in Indonesia while embracing a contemporary perspective, making the entire journey both familiar and completely unexpected.
